Introduction

Versatile, gluten free/low carb wrap. These are great when you need something like bread or as a wrap substitute - I like them sweet or savory, a favorite for "pigs in a blanket" if we grill hot dogs.

It's fun to play with recipe - like adding a little shredded cabbage or green onions when cooking for Asian chicken wraps. For that version, soften the cabbage and onions in the pan first, then pour the batter over top; sometimes I add Sriracha to the batter when blending for an extra kick. Sprinkle a few sesame seeds when cooking, and it's like a diet (compromise) jeon or scallion pancake.

Ingredients

    *Cottage Cheese - FF Trader Joe's .5 cup
    Liquid Egg Whites (carton) - .75 cup

    + whatever seasoning you like

Tips

A small (5") non-stick skillet makes turning these out a cinch. I'll make a full batch and use them a few nights in the week.

These can be delicate, make sure to cook thoroughly. I've added a pinch of guar gum when blended and it helps hold them together.


Directions

Blend ingredients together (I use my magic bullet), add whatever flavors you like ( sweet - vanilla, cinnamon, sugar sub of choice, pinch of salt or for savory - chopped herbs, chili flakes, sesame seeds, caraway seeds, hot sauce, sprinkle of shredded cheese, etc. - so many options. They are bland, but great when you customize!)

Cook about a .25 in a small nonstick pan with cooking spray (a spritz after each pancake helps, depending on your pan). Flip when edges darken a little and curl up.
