Ingredients

    1/2 cup finely chopped onion
    1 cup lentils, rinsed
    3 cups water
    1 can (10 ounces) diced tomatoes (measures 1 3/4 cups)
    2 tbsp minced garlic
    1 cup whole grain brown rice
    3 tbsp curry powder
    2 tbsp freshly squeezed lemon juice
    14oz can of chicken broth (measures 1 3/4 cup)
    16 oz diced chicken breast (boneless/skinless)

Directions

Place all ingredients in crockpot.
Use low setting
I cooked for 7hrs
Check periodically for flavour.

Makes 8 1 cup servings
