Ingredients

    approx 1 cup panko chiplotle, or bread crumbs
    2 eggs, beaten
    flour, white approx 0.5cup
    eggplant, cut into slices approx 1/4inch.

    Dip eggplant slice first into flour to coat
    dip eggplant slice second into egg to coat
    dip eggplant slice third into bead crumbs to coat

    set into baking pan - lined with foil or sprayed.
    continue until all slices are coated
    bake approx 425 for 30min or until done (taste test!).

    can now eat, or freeze.
