Ingredients

    2 green peppers
    1/2 medium onion
    5oz baby spinach
    8 oz mushrooms
    5 oz scallions
    9.6 oz pork sausage
    1 dozen jumbo eggs
    1 cup 1% milk
    2 cups cheese
    Tbsp herbs provence
    Salt
    Pepper

Tips

For the sausage I like to use Jimmy Dean crumbles...takes less time. You can make with no meat or use you favorite meat chopped finely. I reserve the greens of the scallion and add those raw to the mix. Lastly play with your seasoning...I like Herbs Provence with salt and pepper.


Directions

Sauté vegetables till tender, season to taste. Break eggs and whisk in milk. Add sautéed vegetables to egg mix, stir thoroughly and add 2 cups of cheese. Heat oven to 350. Spray cupcake pan with non-stick spray. Fill cupcake pan 1/2 full with egg mixture. Bake 20-25 minutes checking to make sure tops of quiches have set.

Serving Size: Makes 40 quiches using standard cupcake pan
