Ingredients

    1 1/2 to 2 lbs. lamb for stew with bones
    lrge onion
    3 large carrots sliced
    1 celery stick
    3-4 small potatos cut up
    chicken or beef broth (2 cups)
    1 tsp. thyme
    2 bay leaves 1/4 cup olive oil
    1 can (small) tomato paste
    about 8 Roma tomatos ( use whatever type of tomatos you have available).
    1/8 c. parsley dried
    add 1-2 leeks if available.

Tips

I leave meat on bones as the people I make this for like to eat off the bones. Plus bones add flavor to stew.


Directions

Brown meat in olive oil. Set aside on plate. Add onions, carrots, tomatoes, potatoes. Cook for about 5 minutes. Add broth and seasonings. Bring to a boil and then turn down and simmer on low for 2-3 hours.
