Ingredients

    1.25 cups uncooked quinoa
    4 oz Athenos reduced fat feta crumbles
    1.5 cups seeded, diced cucumber
    .5 cups diced red onion
    (1) 14-oz can of Hunts diced tomatoes with oregano and garlic (drained)
    (1) 2.25 oz can of diced black olives (drained)
    1 tsp salt
    1/2 tsp oregano
    1 tbsp. olive oil

Directions

cook quinoa according to package instructions.
dice cucumber and red onions, salt with 1/2 tsp salt.
combine cheese, tomatoes, and olives with cucumbers and red onions. add remaining salt, oregano, and olive oil. mix thoroughly. mix in quinoa.

Serving Size: makes about 8 1-cup servings
