    2 cups cooked brown rice
    1/4 cup butter
    1 cup chopped onion
    8 oz chopped mushrooms
    3 cloves garlic
    1 can (14 oz) canned milk
    3 eggs
    4 oz cheddar cheese
    16 - 20 oz frozen spinach, thawed and drained
    Lemon Pepper
    1 Tbs lemon juice
    Hot paprika


You can use regular paprika if you don't like hot.


While rice is cooking, sauté onions in butter for 5 minutes. Add chopped mushrooms and crushed garlic and sauté another 5 minutes. Can d 1/2 cup white wine if desired.
Combine milk, eggs, salt, pepper, lemon pepper, and lemon juice with a disk. Mix in cheese, spinach, sautéed mixture and rice.
Pour into sprayed 8 by 12 casserole. Sprinkle liberally with paprika. Bake 30-35 minutes at 350.
