Ingredients

~2 cups dry red lentils
~5 cups water
1 carrot (diced)
1 potato (cubed)
1 onion (diced)
salt
pepper
other spices (whatever seems tasty)
1 Tbs olive oil (optional)
Tips
Some foam may form on top of the water while you boil the lentils. This is normal, but can be easily removed with a slotted spoon (recommended if you prefer to avoid being gassy).
Directions
Wash lentils in a medium saucepan until water is clear.
Add water to lentils.
Add carrot, potato, onion and salt.
Bring contents to a boil, then down to a simmer.
Add other spices (cumin, chili powder, black pepper, etc) until it seems tasty.
Continue to cook until lentils are soft and veggies are ready.
Add olive oil and serve.
