Ingredients

    2 cans (3c) black beans
    1 c (1/2c uncooked) quinoa
    3 green chiles (roasted and peeled and diced)
    6 cloves garlic, crushed
    1c fresh corn
    1 pepper red or green (diced)
    1 large tomato (diced)
    1 large yellow onion (diced)
    1 med zucchini (diced)
    1/4-1/2 c chopped cilantro (1/2 bunch?)
    1 - 1/2 c shredded Mexican blend (or pepperjack) cheese

    1 1/2 tbs cumin
    2 tsp chili powder
    some cayenne
    1 tsp paprika (use hot smoked next time)
    2 tsp salt
    1 adobo packet

    maybe add 1 jalepeno next time

Tips

spread 3tbs cheese on 1 low carb tortilla (add 90 cals) and wrao

sauté onions then add peppers then add zucchini then add corn and tomatoes and beans and quinoa and cilantro and spices
