Introduction

This is a very light flavoured salad that will remind you of summer! This is a very light flavoured salad that will remind you of summer!
Number of Servings: 15

Ingredients

    Salad:
    2 cups uncooked quinoa
    2 celery stalks, chopped
    2 green onions, chopped
    1 mango, chopped
    1/4 cup slivered almonds
    1/4 cup dried cranberries
    1 mango, peeled and chopped
    1/2 cup fresh chopped cilantro

    Dressing:
    1/4 olilve oil
    Juice of two limes (approx 3/4 cup)
    1 TBSP dijon mustard
    Fresh garlic
    salt and pepper to taste

Tips

This recipe is very forgiving and flexible. Feel free to add any other veggies you like or omit ones you don't like.


Directions

Cook quinoa according to package directions and let cool. Once quinoa is cool, place in a large bowl and add salad ingredients and mix well.

Mix dressing ingredients together and shake well. Add to salad ingredients and mix well. Refrigerate for a couple of hours to allow flavours to blend.

Serving Size: Makes approximately 16 1-cup servings
