Ingredients

    1 cup almond meal or almond flour
    1 cup water
    ¼ tsp. salt
    1/2 cup freshly grated Parmesan cheese. Do NOT use the dried grated cheese from the shelf!

Tips

A tasty way to serve this polenta is with sautéed onions, mushrooms, bacon, spinach, and garlic. Another option is to allow to cool and then stir in fresh berries, honey (to taste), and garnish with a sprinkle of cinnamon. Similar to a creamy bread pudding.

Directions

Put almond meal, water, and salt in a medium-sized pot. Whisk until almond meal is free of lumps. Bring to boil over medium heat, whisking occasionally. Once mixture is boiling, whisk continuously for 1-2 minutes, until it visibly thickens. Remove from heat, and whisk in cheese, whisking until parmesan cheese is fully melted. Add pepper to taste.

Mixture will thicken as it cools. The thickness may vary depending upon the almond meal or almond flour. If you want it thinner, simply add a little more water.
