Introduction

Banana bread like pancakes! Banana bread like pancakes!
Number of Servings: 16

Ingredients

    1/2 cup or one large extra ripe mashed banana
    1 tbsp vanilla extract
    1/2 cup of complete pancake/waffle mix
    1/2 cup of whole wheat durum flour
    1 tsp of baking powder
    1 tbsp of cinnamon
    About 1 2/3 cups of water

    Mashed the extra ripe banana in a bowl add vanilla mix lightly with a fork and set aside.

    Add the pancake mix, wheat flour, cinnamon and baking powder use a whisk to mix it well. Add water lightly whisk to form batter. Fold in banana mix.

    Use 1/4 measuring cup to spoon onto a hot griddle

Tips

I use a sandwhich maker to get the triangle form. 1/4 measuring cup fills each pocket perfectly. I use my sandwhich maker for all this types of pancakes. I even use to make wheat donuts! YUM
I top these pancakes with sugar free syrup but feel free to top with whatever you like just be sure to count the extra calories. Toppings do add up quickly!
