I have switched the almond flour for spelt. I generally spice to taste. This recipee I have found to be rather mild even for my tastes.

Ingredients

2 pounds boneless, skinless chicken breast cut into strips
1 cup spelt flour
1 teaspoon sea salt
2 teaspoon garlic powder
1 teaspoon paprika
1/8 tsp cayenne (optional)
1/4 tsp black pepper
1/2 cup coconut oil, melted
Directions
1.Prep chicken if not pre-cut.
2.Preheat the oven to 425 degrees.
3.Mix almond flour and spices into one bowl.
4.Melt coconut oil in another bowl.
5.Dip the chicken strip into coconut oil and then into the almond flour mixture and place on baking pan.
6.Dip and cover all chicken and bake for 10 to 15 minutes or until chicken is cooked through and light brown.
7.Let cool and place in freezer bags, stacking like bricks to save space.
8.Enjoy!
