Ingredients

    1 lb steelhead fillet, with or without skin
    1 clovegarlic, chopped fine
    1 1/2 tablespoons coarsely chopped fresh rosemary
    1 lemon, zest of
    1/2 lemon, juice of
    1/4 teaspoonsalt
    1/2 teaspoonfresh ground pepper
    1 tablespoonolive oil, plus
    additional oil, for greasing baking pan

Directions


Directions:


Prepare a baking or roasting pan by lining it with foil and brushing it with olive oil.


Preheat oven to 325 F.

Mix together all remaining ingredients except fish into a well-blended paste.

Place fish skin-side down (if it has skin) on baking sheet, then spread seasoning over flesh.


Bake fish at 325 for 10 minutes. Then broil for an additional 5 minutes.


Serve with steamed vegetables, salad, orzo salad, etc

    Looks great!! Going to try it tomorrow, but with orange zest. (Don't have a lemon)
    Did try it today. Might have been the best fish I've ever cooked. However, I had a pretty thick piece, so I baked for 11 minutes and broiled for 8.
