Number of Servings: 6


    3 medium potatoes
    1 rib of celery
    0.25 cup balsamic vinegar
    1 tsp onion powder
    0.5 tsp garlic powder
    0.5 tsp thyme
    salt and pepper


1. Peel and cube 3 medium potatoes.
2. Boil approx. 15 minutes, until cooked.
3. Drain potatoes and let cool 10 min or until cool to touch.
4. Add 0.25 cup balsamic vinegar, onion powder, garlic powder, one chopped celery rib, thyme, and salt and pepper to taste. Mix well.

Makes 6 servings (approx 100 g per serving)

    This was very good and very easy. I used red potatoes. I think I will try grilling it on the grill after marinated too! - 6/21/08
