Introduction

These are my salmon patties. Usually, I add celery if I have it. Add as much celery as you desire; I add about 1/3 - 1/2 cup of chopped celery. These are my salmon patties. Usually, I add celery if I have it. Add as much celery as you desire; I add about 1/3 - 1/2 cup of chopped celery.

Ingredients

    1.75 cups canned salmon
    2 beaten eggs
    1 cup crushed saltine crackers (adjust for moisture level)
    1/2 cup chopped yellow onions (red was only onion in database)
    Vegetable oil for frying: this will vary. Nonstick pans take less than metal pans.

Tips

Some people object to the bones and skin, but it has several nutrients, including calcium. You can crush the bones if you do not like them. When I was growing up, my brother and I fought over who got the round spinal bones! They were a special treat.


Directions

Place salmon in mixing bowl. Do not drain. I leave in skin and bones for more nutrition and better taste. Add two eggs and beat with salmon juices, being careful not to disturb the salmon chunks. Add chopped onion. (I use yellow onions. Database only had red onions.) Roughly crush saltine crackers and gently mix in with all ingredients.
Let mixture set for 10 minutes to allow saltines to absorb the moisture. Form into 8 patties. If mixture is too moist, add saltines.
Fry patties in oil. Drain on paper towel. Serve immediately or serve cold. May be reheated in the microwave for 1 minute or so.
