Introduction

Can easily be doubled to fill a 12in baking tin. It's not healthy, but it IS my husband's favourite... Can easily be doubled to fill a 12in baking tin. It's not healthy, but it IS my husband's favourite...

Ingredients

    Vanilla cake:
    225g plain flour
    112g caster sugar
    2tsp baking powder
    180ml semi skimmed milk
    1 egg
    1 tsp vanilla
    15g melted salted butter

    Cinnamon inclusions:
    110g salted butter, softened
    112g brown sugar
    1 T plain flour
    1 T cinnamon

Glaze (optional, not incl in calorie count)
    112g icing sugar
    2.5 T semi skimmed milk
    1 t vanilla

Tips

I make this in a 30cm bread tin so I can slice it neatly into ten 3-cm slices.

Directions

Mix the vanilla cake ingredients without the butter. Once mixed well, slowly stir in the melted butter and pour into a greased 6in baking tin or 30cm bread tin.

Separately, mix the cinnamon inclusion ingredients until well combined. Drop evenly over cake mix and swirl through the vanilla mix with a knife.

Bake at 350 F / 180 C for about 15-20 minutes, until a toothpick comes out nearly clean. Allow to cool if you want, but it's nicer warm!

If you want the glaze- whilst the cake is in the oven, whisk the glaze ingredients until smooth. Drizzle over the warm cake when it is ready.

Serving Size: 10 slices... or fewer slices and fewer calories!
