Introduction

This is a bare bones recipe that can be tweaked a bunch of yummy ways. I like mine with low fat chive cottage cheese and spicy salsa :-) This is a bare bones recipe that can be tweaked a bunch of yummy ways. I like mine with low fat chive cottage cheese and spicy salsa :-)

Ingredients

    2 eggs beaten
    1/2 c. low fat cottage cheese
    butter flavored cooking spray
    Mrs. Dash Original (optional)
    salt (optional)

Directions

1. In a small bowl combine the eggs and cottage cheese.
2. Heat a small non-stick frying pan over medium-low heat. Spray with a little cooking spray.
3. Add the egg mixture to the pan.
4. Cook for a few minutes, then gently stir the eggs around with a wooden spoon or spatula. Continue cooking until the eggs are fluffy and cooked through.
5. Season with salt and Mrs. Dash and serve immediately.
