Ingredients

3 4oz boneless skinless chicken breasts
1/4 c diced red onion
1 jalapeno, seeded & diced
juice of 1 lime
4 tbps fresh cilantro
1 tbsp ground cumin (or less to taste)
1/3 c light mayo
1 tbsp dijon mustard
Tips
Serving option of serving in half an avocado, but avocado not included in nutritional intake.
Directions
Poach chicken breasts (careful not to overcook), then shred chicken (I used the Kitchenaid for this). Mix all ingredients (except chicken) well in a large bowl. Combine with chicken & chill at least one hour.
