Introduction

A tasty blend of veggies and rice, good as a side dish or a main dish. A tasty blend of veggies and rice, good as a side dish or a main dish.
Number of Servings: 6

Ingredients

    1.5 cups white rice, uncooked
    2 large celery stalks, finely chopped
    1/2 to 1 cup white or yellow onion, finely chopped
    1/4 cup margarine
    1 cup carrots, chopped
    1/2 cup peas
    3 cups hot chicken broth (may use veg. broth)

    Other veggies, if desired. (Broccoli and corn make great additions, or sometimes red peppers.)

Tips

Once cooked, DO NOT replace lid, unless you want soggy rice.


Directions

In a large pot or saute pan, saute onions and celery in margarine for approximately 5 minutes. Stir frequently. Add rice, and stir mixture until rice is golden brown. Add and stir in other vegetables. Pour in HOT broth, stir briefly. Cover and cook 25-30 minutes.

Serving Size: Makes about 6 servings
