This is a breakfast frittata that can be made for dinner. Remove the meat for a vegetarian meal. I've modified this from an Ellie Kreiger recipe. Ingredients

8 large eggs
8 links of chicken sausage
2 TBS water
2 tsp olive oil
1 small red onion
2 cups chopped cooked broccoli
1/4 tsp salt
fresh black pepper
1/2 C. shredded sharp cheddar cheese
Tips
Use an oven-friendly skillet.
Directions
Cook the broccoli, chop, and set aside.
Cook the sausage, dice, and set aside.
Using the 1 tsp of oil and 2 TBSP of water, saute the chopped red onion. Cook for about 5 minutes or until softened.
Add the broccoli and sausage into the pan with the onions, add the salt, and saute for 2 minutes.
Whisk together the 4 whole eggs and the whites from the other 4 eggs.
Pour the mixed eggs into the skillet with the other ingredients. Reduce the heat to medium-low. Cover with a lid and cook for approx. 7 minutes (until the edges cook and the center is somewhat liquid).
Heat the broiler in your over. Sprinkle the frittata with the cheese. Place the whole skillet in the over (about 2" away from the broiler) and cook for 2 minutes. Remove, cut, and enjoy!
Serving Size: Can cut the frittata into 8 servings or to your need.
