Ingredients



    6 Skinless Chicken Breasts (sliced midway)

    2 Egg (beaten)

    1/2 Cup Milk

    3 Cups Homemade Bread Crumbs

    1 Cup Ground Coconut

    2 Cup Flour

    ¼ tsp Turmeric Spice

    ½ - 1 tsp Coriander Spice

    ¼ tsp Salt

    Garlic, parsley, pineapple rings , lemon

    ½ Cup Light Olive Oil (for frying)

    ¼ Cup Butter





Tips

Enjoy with a cold glass or two of white wine.
A lovely recipe for sunday lunch.
Easy to prepare before the final bake 20 minutes before serving. No stress while entertaining.


Directions

Method:
Cut breasts open .
Beat with a tenderizer using cling wrap on top to protect chicken pieces.
You will need 3 x plates or containers.
One for flour, spices and salt, mix well.
Second dish for beaten eggs and milk.
Third for dish the bread crumbs and ground coconut and garlic.
Dip each beaten chicken slice into the flour, coat well on both sides, shake off any excess flour. Dip floured chicken into the egg mix, coat well on both sides, then place directly into the bread crumb mixture, turn over and coat other side until well coated, set aside. Preheat oven to 190 C.
Preheat a large fry pan with enough oil and butter to cover the pan. When oil is ready, add 2 chicken schnitzels and cook for 2 minutes on each side.
Place on paper towel.
Arrange all on a raised baking tray.
Bake for 10 - 12 mins or until cooked.
Serve with a green, tomato and advocado salads.
Garnish an top with fried pine apple.
Accompany with potatoes, rice or couscous.
