Introduction
This is a recipe my boss gave me. He was endlessly tweaking it and this is my version (I removed bell peppers from the original recipe since both my husband and I don't like the taste of bell peppers in cooked dishes).I recommend a large crock pot for this recipe. A smaller crock pot won't have enough room.
This has some heat to it, but you can opt for the milder seasoning, eliminate or reduce the Tabasco and/or replace the habanero with a milder pepper. I like flavorful heat and this recipe has it in spades! This is a recipe my boss gave me. Ingredients
-
1.5lb lean ground beef
1/4 cup of Chorizo sausage
1 medium white onion
1 jalapeno pepper
1 habanero pepper
2 cloves garlic, minced
2 cans spicy chili beans
2 packets chili seasoning (spicy/hot)
3 cans stewed tomatoes
1 can tomato sauce (15oz)
1 can tomato paste (6oz)
1 tbsp Tabasco sauce
2 tsp white sugar
1/4 tsp cinnamon
Tips
Cooking times are really flexible on this as you can see. This also reheats amazingly well (my husband says it's even better the next day). My husband likes to add a dollop of sour cream and some shredded cheese.
Directions
Brown ground beef and drain excess grease. Add Chorizo sausage at the end to lightly brown. Add chili seasoning to coat beef and Chorizo. Set aside in crock pot.
Dice onion and peppers. Heat pan with olive oil and saute onion, peppers and garlic over medium heat (2 minutes). Add to the crock pot.
Add all canned ingredients to crock pot and stir. Add sugar, cinnamon and Tabasco sauce to mixture and stir. Set crock pot to high and cook for 2-3 hours. Turn crock pot to low and continue cooking for 2-5 hours.
