Introduction

Ingredients

    Hard Boiled Egg, 1 large

    Egg white, 3 serving s(remove)
    ( three hard boiled egg whites)

    Yellow Mustard, 1 tsp

    Light Mayonnaise (Mayo), 1 tbsp

    Alfalfa sprouts, 1 cup

    Romaine Lettuce (salad), 0.5 cup,

    Flaxseed, 1 tbsp (remove)

    salt/pepper/paprika


Directions

Put the 4 eggs into a pot and bring water to boiling. turn off stove and let the eggs sit in the pot with cover on for 15 minutes.

peel eggs and set aside 3 of the yolks to be used for another recipe.

chop the remaining one egg, plus 3 egg whites into chunks.

Add mustard, mayo, flax seed to the egg whites and mix well.

Salt/pepper to taste. Paprika optional.

Layer onto Lettuce or into a whole wheat wrap with alfalfa sprouts and lettuce.

Makes a satisfying lunch!
