Introduction

I kind of just made this up, but it's pretty good and good for you. I would have used whole wheat flour, but I was out. I kind of just made this up, but it's pretty good and good for you. I would have used whole wheat flour, but I was out.
Number of Servings: 15

Ingredients

    1.5 cups minute or old fashioned oats
    1/4 cup natural peanut butter
    1 banana
    2 eggs
    2 cup milk
    1 tsp cinnamon
    1 tsp vanilla
    1.5 cups flour
    1/2 tsp salt
    2 T sugar
    1T baking powder
    1 tsp baking soda

Directions

Put oats in food processor & run for a minute or so. Add next 3 ingredients and run until smoothish. Add about a cup of milk while pureeing. Add cinnamon and vanilla. Pour into a bowl and add remaining ingredients. Stir until combined. Scoop 1/3 cup portions onto hot pan and cook. Serve with syrup or jam.

Serving Size: 1 recipe makes 15 1/3 cup size pancakes.
