Introduction

Ingredients

    1-3/4 cup bran flakes(Slightly crushed)
    1-1/2 cups whole wheat flour
    4 teaspoon cinnamon
    1/4 tsp. Cloves
    1/2 tsp.Ginger
    1/2 tsp.nutmeg
    2 teaspoon baking soda
    1-1/2 teaspoon salt
    1 cup brown sugar
    1/4 cup stevia (optional)
    16oz canned pumpkin
    1 cup egg substitute
    1 cup applesauce
    1/2 cup Greek yogurt
    3/4 cup craisins

Tips

This is a very moist bread. I suggest you freeze it if you won't be eating it in a day or two. It will mold quickly. I am freezing one loaf whole and slicing the other one but freezing the individual slices.


Directions

Combine egg substitute, applesauce, pumpkin, and yogurt together. Add the remaining ingredients and mix until well combined. Divide into 2 prepared loaf pans.
Serving Size: 2 loaves 12 slices per loaf
