Introduction

Yummy summer treat! Yummy summer treat!
Number of Servings: 8

Ingredients

    4 c. water
    2 c. Quaker Quick Barley
    1 10 oz. container of Grape Tomatoes
    1 8 oz. block of Feta Cheese
    24 Black Kalamata olives
    20 Moroccan oil-cured olives
    1 1/2 T. lemon juice
    3 T. Italian dressing
    1/4 c. chopped scallions or green onions

Directions

Cook barley in water according to package directions. Cut grape tomatoes in half. Slice green onions into small pieces. Crumble feta cheese. Chop olives. When barley is cooked, allow to cool to room temperature and add to above ingredients. Mix together with lemon juice and Italian dressing. Add salt and pepper to taste. Chill.

    Wow... this sounds fantastic. Think I will make it tomorrow!

    UPDATE: I made it, and it was sooo delicious! I used regular pearl barley, reduced-fat feta, and light balsamic vinegrette. I made roasted veggies to go with it. I will definitely be making this again.

    I'm just going through to the kitchen now to make something similar for my dinner. Can't make it exact as I don't have the "right" ingredients.

    OK - only got ordinary pearl barley - it's on to cook now. I do have olives, salad onions, feta cheese. I only have normal-sized tomatoes - so I'll dice.

    Very tasty salad. I substituted Kraft Roasted Red Pepper Salad dressing, only 40 calories for 2Tbls but lots of flavor. - 3/30/09

    DEEE-LISH-SHOUS!! I used regular pearl barley and calamata olives (quartered) and added a bit of celery and chick peas. Because I ended up with so much barley, I doubled the dressing & lemon juice. I will DEFINITELY make this again! - 8/29/08
