Introduction

Tuna and brown rice salad with an EVO and ACV dressing. Tuna and brown rice salad with an EVO and ACV dressing.
Number of Servings: 6

Ingredients

    Salad:
    640g (4 tins at 160g each) of tuna in water/brine
    2 cups of brown rice, cooked
    4 boiled egg whites, chopped
    2 apples, chopped
    2 celery stalks, chopped
    1 green bell pepper, diced
    1 yellow bell pepper, diced
    3 scallions, finely chopped
    2 cups of spinach, diced

    Dressing:
    6 tbsp extra virgin olive oil
    2 tbsp aaple cidar vinegar
    2 tbsp fresh parsley, chopped small
    1 tbsp fresh lemon juice
    1 tsp dried, ground basil
    1 tsp dried, ground oregano
    2 cloves of garlic, minced
    salt and pepper to taste

Tips

To easily mix the dressing by hand, use a clean jam jar to combine the ingredients by shaking vigorously.

As this salad makes six servings, it is best suited for family lunch times or to be made in advance for several days.


Directions

Cook the rice beforehand and allow to cool.

Ensure all salad ingredients are cut quite small and then mix together in a large bowl.

For the dressing, combine ingredients in a blender and blitz for 10 seconds or mix by hand until well combined.

Pour dressing over the mixed salad and enjoy!
