Introduction

These whole grain muffins are packed full of good for you stuff and they freeze well. These whole grain muffins are packed full of good for you stuff and they freeze well.
Number of Servings: 24

Ingredients

    Mix together:
    1 1/2 cup oat bran
    1 cup whole wheat pastry flour
    1 cup freshly ground flax seed meal
    1 cup wheat bran
    & 1 tablespoon baking powder
    and set aside.
    In blender place 2 oranges peeled, seeded and quartered
    1 cup splenda
    1 cup buttermilk
    1/3 cup canola oil
    2 egg whites and one whole egg
    1 teaspoon of baking soda
    1/2 teaspoon salt
    blend and add to dry mixture along with the
    2 cups of golden raisins and mix together gently.

Directions

Place large spoonfuls into 24 muffin cups sprayed with cooking spray and bake at 375* for 18-20 minutes or until toothpick comes out clean. Let sit in pans for 5 minutes and then remove to cooling racks.....good hot or cold.
Makes 24 servings.
