Ingredients

1-2 bell peppers (or whatever veggies you want, really)
8 eggs
3 slices of bacon (if you’re into that sort of thing)
1/4 cup shredded cheese
Splash of milk (exactly one splash)
Tips
This is a fantastic make-ahead breakfast. Just pop it in the microwave and serve it on a piece of toast.
Directions
Preheat oven to 350.
Chop peppers, set aside.
Chop and cook bacon.
Whisk eggs, milk, and spices.
Spray baking dish.
Sprinkle cheese onto baking dish.
Pour in egg mixture.
Add diced peppers.
Top with bacon.
Bake for about an hour (until egg is thoroughly cooked).
Serving Size: Makes about 10 servings.
