Ingredients

1 1/2 cup quinoa flour
1 tsp baking soda
1 tsp salt
2 scoops Chocolate Caramel flavored whey protein
2 scoops Vanilla flavored whey protein
2 sticks unsalted butter (1 melted, 1 softened)
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large egg
2 cups dark chocolate chips
Directions
This recipe is a slight variation of my chocolate chip protein cookies - it is using quinoa flour instead of all-purpose flour, so it has a little more fiber and protein to it. Also, we are using dark chocolate chips instead of semi-sweet, which provides us with another slight boost to the dietary fiber. I'm using a smaller disher this time, so we get more cookies out of it with fewer calories each.
Preheat oven to 375 degrees F.
In a small bowl, combine flour, baking soda, salt, and whey protein.
In a blender bowl, cream together butter, sugar, brown sugar, and vanilla. Add in egg one at a time and beat well. Slowly beat in the protein mixture until it is completely incorporated. Stir in the chocolate chips.
Line 2 cookie sheets with parchment paper, and using a #50 scoop, drop dough onto the sheets, 12 per sheet. Set up 2 more sheets of paper in the same manner.
You'll end up with one cookie's worth of dough left over to make the 49 - eat it as a treat if you like.
Bake for 5 minutes, and then rotate the cookies (bring the bottom sheet up to the top and the top sheet to the bottom, turning so that the back now faces the front). Bake for 5 more minutes.
When the cookies are just brown on the edges, remove from the oven and cool on wire racks.
Transfer the second set of parchment paper onto the baking sheets, and bake these in the same way.
