Ingredients

    1 1/2 lbs. boneless skinless chicken breasts
    1 medium yellow onion, diced
    1 bell pepper, thinly sliced
    1 jalapeno, diced
    2 cloves garlic, minced
    1 15-oz. can diced tomatoes
    4 cups chicken stock
    1 tbsp chili powder
    1 tbsp cumin
    1 tsp dried oregano
    1/2 tsp paprika
    Salt and freshly ground pepper, to taste
    2 tbsp fresh cilantro, chopped
    1 avocado, pitted and sliced

Directions

Put chicken on the bottom of the slow cooker, add vegetables on top. Cook on low for 8 hours. Pull apart chicken. serve with Avocado and dollop of sour cream.

    Very nice. We did use less chicken broth (acc to original recipe) and more tomatoes (acc to recipe). It was nice to find this in SPARK. - 3/11/16
