Ingredients

    1 lb. ground beef (90%)
    small onion, diced
    4 cloves of garlic, minced
    1 stalk celery, diced

    2 TBS mild chili powder
    1 TBS cumin
    1 tsp. smoked paprika
    1 tsp. turmeric
    black pepper to taste
    red pepper flakes to taste (optional)
    1-2 TBS soy or worchesteshire sauce
    1-2 tsp. Better Than Boullion (beef-low sodium)
    1-2 tsp. unsulfured molasses (optional)

    1 can Kidney beans, low sodium, rinsed
    1 can black beans, low sodium, rinsed
    4 cups V8 juice
    1 can diced tomatoes

Tips

only 1 pan is necessary if you use a dutch oven.


Directions

brown meat with onions, celery, and garlic in a dutch oven. Add seasonings and simmer for a couple of minutes. Add v8 juice, can of diced tomatoes, beans. Allow to simmer for several minutes on low. Adjust seasiongs. The longer the dish sits, the more the flavors marry together.
