Ingredients

1 lb lasagna noodles (8 noodles)
8 oz ground turkey
1 small onion, diced
1/2 cup spinach
1/2 cup chopped mushrooms
2 cloves minced garlic
salt to taste
pepper to taste
red pepper flakes to taste
1/4 cup low-fat ricotta
1/4 cup parmesan
1 cup tomato sauce
1 can diced tomatoes
1 can artichoke hearts
1/2 cup mozzarella (part-skim)
Directions
Preheat oven to 350.
Boil lasagna noodles per package instructions. Set aside.
Saute onion and mushrooms with salt, pepper, and red pepper flakes. Add ground turkey. cook until turkey is brown. Mix tomato sauce, ricotta, parmesan and spinach in with turkey and veggies. Divide into 8.
Lay lasagna noodles flat. Spread one serving of meat mixture on to noodle. Roll up and place in 8x8 casserole dish. Repeat until all noodles and meat is used.
Top dish with can of diced tomatoes and chopped artichoke hearts.
Bake for 30 minutes at 350. Add mozzarella cheese. Bake 5-7 more minutes until cheese is melted and slightly browned.
Serve and enjoy!
