Ingredients

    DRY INGREDIENTS:
    1/4 cup(28g) coconut flour
    1 tsp cinnamon
    1/4 tsp nutmeg ( a pinch)
    1/4 tsp pumpkin spice (a pinch optional)
    1/2 tsp low sodium salt
    1/4 tsp baking soda

    WET INGREDIENTS:
    1/4 cup (60g) pumpkin
    3 tbsp (45g) almond milk (i used unsweetened silk)
    1 tbsp honey
    3 lg eggs (about 145g)
    1 tbsp coconut oil (melted)
    1 tsp vanilla

Tips

Instead of pouring syrup over pancakes, I put a small amount of (pure) maple syrup in small cup and dipped bites into the syrup. You will use a lot less this way, as the syrup won't soak into the pancakes.


Directions

In small bowl mix dry ingredients together, set aside. In larger bowl whisk together wet ingredients until blended. Add dry ingredients to wet ingredients and whisk together until most lumps are gone. Heat griddle or pan to medium and coat with either coconut oil or spray. Use large serving spoon to spoon batter into pan and spread out a bit. Cook on each side 2 to 4 minutes.
