Introduction

A refreshing and light salad. A refreshing and light salad.

Ingredients

    1 medium Red Ripe Tomato, cut into bite-sized pieces
    1/2 cup sliced Cucumber (with peel)
    1 small Onion, cut into bite-sized pieces
    1 tbsp. Extra Virgin Olive Oil
    1 cup Apple Cider Vinegar
    1 cup cold water
    Salt and Pepper to taste (I prefer freshly cracked pepper)

Tips

This recipe lends itself well to doubling and each ingredient may be adjusted to individual tastes.


Directions

Place all ingredients in a lidded bowl. May be served immediately but is better if allowed to refrigerate an hour or more before serving to allow the flavors to blend.
