Ingredients

    1. Boil 200g lentils, salted water till soft.

    1. Olive oil - heat in pan
    2. Chop red onion - brown
    3. Chop 2 x red pepper - add - cover till soft
    4. Add together
    - 5 roughly chopped cloves garlic
    - 2 red chillis - finely chopped seeds in
    - V. large chunk ginger - finelly chopped
    5. Add sweet Potato - rough chopped
    6. 2 flat tbsp hot quality curry powder
    7. add 2 x 1 inch cinnamon sticks
    8. Add water to lift from bottom of pan
    9. Add 10 x frozen cubes spinach
    10. 1 x tomato cut into wedges
    11. Add lentils
    12. Add chopped coriander
