Ingredients

    4 egg whites
    pinch cream of tartar
    1 teaspoon cornflour
    1/2 teaspoon white vinegar
    1/2 teaspoon vanilla essence
    1 tablespoon cold water
    150g low-fat Fruche (or fromage frais - not pineapple)
    1/3 cup (65g) ricotta cheese
    1 mango, sliced
    2 kiwi fruit, sliced
    125g strawberries, sliced
    1 banana, sliced
    pulp of 2 passionfruits

Directions

Cover a baking tray with baking paper. Mark a 20cm circle.
Beat egg whites and cream of tartar in a bowl until soft peaks form. Gradually beat in half the sugar. Combine cornflour and remaining sugar. Gradually beat into egg whites. Beat until think and glossy. Fold in vinegar, vanilla essence and water. Spoon onto the prepared tray. Make a slight hollow in the centre. Back at 150 degrees C on lowest shelf of the oven for 1 1/2 hours or until crisp and dry to touch. Cool in oven with door ajar.
Beat together fruche and ricotta cheese. Just before serving, top the Pavlova with fruche mixture. Decorate with fruit. Drizzle with passionfruit.

Pavlova's can be toped with any fresh or unsweetened canned fruit of your choice.
