Number of Servings: 6


    200g (6 1/2oz) snow peas (mange tout),
    sliced diagonally
    1/2 red pepper (capsicum), sliced
    4 leaves oak leaf lettuce
    5 leaves green coral lettuce or any lettuce will do
    250g (8oz) cherry tomatoes
    60g (2oz) watercress springs
    Parmesan cheese, to serve


    2 tbl olive oil
    1 tbl lite mayonnaise
    1 tbl lite sour cream
    2 tbl lemon jice
    1 tsp soft brown sugar
    cracked black pepper


Serves 4-6

1. Wash the lettuce and tomatoes. Combine the snow peas, red pepper, watercress, lettuces and tomatoes in a large bowl.

2. To make Dressing: wisk all the ingredients in a small bowl for 2 minutes or until combined. Just before serving, pour the drewssing over the salad, strirring until well combined. Top with the parmesan chesse.

* Preparing Snow Peas
Pull any threads from the tails of the snow peas, then snap off the tops. Pull the tops down to remove the string from the side.
