Ingredients

    Small potatoes, 2, diced with skin on.
    Turkey, cooked & chopped light meat, 1 cup
    2 large eggs
    1/2 bell pepper or can of chopped green chilis
    Stalk of green onion, bulb chopped and some greens chopped to sprinkle on top
    1 tsp olive oil
    1 tsp chili powder
    1 tsp cumin
    1 tsp onion salt

Directions

Heat oil in cast iron pan. Add onion, peppers & diced potatoes, toss to coat with oil. Sprinkle on chili powder, cumin and onion salt and cook with lid on until potatoes are becoming tender, stirring occasionally.

Stir in turkey and cook until heated through. Make two wells in the turkey hash and break a raw egg into the well. Put lid back on and cook until the whites are set, then serve.
