Ingredients

    1 stick butter
    2 medium onions, chopped
    2 medium apples, chopped
    1T sage
    1t salt
    1t black pepper
    1/4c slivered almonds
    1/4c chopped walnuts
    1/4c sunflower seeds
    1/4c dried cranberries
    1/4c dried blueberries
    1/2c egg beater
    2T parsley
    4c turkey stock
    16c stuffing mix

Directions

Preheat oven to 350. Melt butter in large skillet over medium heat. Stir in apples and onions. Sautee for three minutes. Add seasonings, dried fruit, nuts and seeds. Stir until well mixed. In a large bowl, whisk together egg beaters and parsley. Add broth and stuffing mix. Mix together well. Add ingredients of skillet. Stir thoroughly until is uniformly moist. Put in greased 9x13 pan or 3qt casserole. Bake in oven, covered, for 30 minutes. Uncover and bake an additional thirty minutes.
