Ingredients

2 red peppers, cut into 2 inch squares
2 small zucchini, cut into 2 inch rounds
1 japanese eggplant, cut into 2 inch rounds
2 tablespoons olive oil
Salt and pepper to taste
1 cup peanut sauce
Peanut Sauce
4 TBSP peanut butter, room temperature
3 tablespoons warm water
2 tablespoons soy sauce
2 limes, juiced
1 tablespoon ginger, minced
1 teaspoon honey
1 teaspoon sriracha sauce
Salt to taste
Directions
Blend everything together till a smooth paste is achieved.
Coat the vegetables with the oil and sprinkle salt and pepper. Grill till the vegetables are soft and golden brown. Place the vegetables in a bowl and add one cup of peanut sauce. Mix well and serve as a side dish.
