Introduction

Ingredients

    1 pkg Recipe & Seasoning Mix,
    3 tbsp flour
    1 lb thinly sliced boneless, skinless chikcen breasts
    3 tbs olive oil
    1 1/2 cups water or chicken stock (recipe is based on water)
    1/2 cup white wine
    1 cup orzo pasta

    1 pkg (8 oz) sliced mushrooms (this is not included in the recipe, as we don't like mushrooms)

Tips

The package says it prepares approx 8 servings per container, so that is what I based this on. However, I think it would be more realistic to say that it makes 4 - 5 servings, based on a pound of chicken!

To prepare with rice: Use 11/2 cups chicken stock and 3/4 cup long grain rice, and increase cook time to 25 minutes.
Calculate the additional calories if adding mushrooms,and/or using chicken stock instead of water.


Directions

1. Mix flour and 2 tbs of the seasoning mix in shallow dish. Coat chicken with flour mixture.
2. Heat oil in large nonstick skillet on medium hat. Cook 1/2 of the chicken pieces 3 minutes per side or until golden brown. Remove from skillet. Repeat with remaining chicken.
3. Stir mushrooms into skillet (if using), adding additional oil if needed. Cook and stir 3 minutes or until lightly browned. Add water, wine and remaining Seasoning mix. Bring to boil, stirring to release browned bits in bottom of skillet. Stir in orzo. Place chikcen over orzo. Reduce heat to medium-low, cover and cook 10 minutes or until liquid is absorbed and orzo is tender.
