Ingredients

    1/2 package frozen spinach, thawed and drained
    1 cup nonfat cottage cheese
    1/4 cup feta cheese, crumbled
    1 tsp. salt
    1 tbsp. light Philly Chive and Onion cream cheese (optional)

Directions

Thaw and drain spinach, being sure to remove as much excess water as possible. Then combine spinach, nonfat cottage cheese, half the feta cheese, salt and optional tablespoon of cream cheese in a blender or food processor (I use a Bullet blender). Blend till mixture is of a creamy, emulsified consistency. Then pour mixture into a microwave-safe bowl or dish. Microwave at a low power for 2 minutes, stirring halfway through. This yields a warm, creamy dip. You can top with the remaining feta (if you want, putting the dish under a broiler for a minute or two melts the feta nicely) and serve with nacho chips or fresh veggies such as carrots and celery sticks. Or spread it on some whole wheat bread for a delicious sandwich!
