Ingredients


    Green Beans cut up, 1.5 cups
    1 med yellow onion chopped fine
    Carrots, raw, 1.5 cup, chopped
    Celery, raw, 2 stalk, large
    1 can of diced tomatoes (puree 1/2 of this)
    Beans, 1 cup uncooked
    Lentils, 1 cup uncooked
    Olive Oil, 1 tbsp
    Cabbage, fresh, 2 cup, shredded
    *2 tsp Italian Seasoning or more to taste
    5 cubes of veggie broth
    Water, tap, 12 cup (8 fl oz) (remove)

Tips

If you are using precooked beans and lentils, reduce cooking time accordingly.


Directions

Saute olive oil with onions, carrots and celery for 15 minutes or until soft. Add water and all of the rest of the ingredients. Allow to simmer for 2 hours.

Serving Size: Makes 6 -2cup servings of soup
