Introduction

I eat these a lot for breakfast. You can substitute anything for the sausage pepper onion, as long as the eggs/milk/water ratio is the same, you're good to go! I make it with spinich & mushrooms, turkey & cherry tomatoes, literally anything that tickles your fancy would work! I eat these a lot for breakfast. Ingredients

    1/2 c Ground Italian Sausage
    1/2 Red pepper
    1/4 Yellow Onion
    5 Eggs
    1/2 c 1% Milk
    1/4 c Water
    1/2 c Shredded Cheddar Cheese

    The mixture is good for a 6 large cupcake tin (i like them in the cupcake tin so i can keep track of my portions)

Directions

Cook sausage, pepper and onion mixture seperately until cooked through (if it's a little pink, thats ok because you're going to bake it). Mix the eggs, water and milk and beat with a fork. Then mix in the sausage and veggies. Spray the cupcake tin with Pam. Sprinkle half a TBSP of cheese on the bottom of each section. Scoop in the egg and sausage mixture (i use an icecream scoop, it's a lot easier that way). Then bake in the oven for 35 min at 350 degrees
