Number of Servings: 6

Ingredients

    For Quinoa:
    3 cup Red Quinoa
    3 cup Chicken Broth
    3 cup water

    For Vegetables:
    1 small Onion
    1 clove Garlic
    1/2 cup Frozen Peas
    1 cup chopped Lightly steamed Broccoli
    2 medium chopped Carrots
    1/2 sliced Green Pepper
    2 tbsp Red Pepper/ Cayenne Pepper
    1 tbsp Soy Sauce
    2 diced Scallians
    5 sliced in half Chili Peppers

    Optional:
    1 tbsp Hot Sauce or Sriracha Sauce

Tips

Can add meat


Directions

Cook quinoa in water and chicken broth
Fry vegetables in pan
Add soy and/or sriracha sauce to vegetables and continue to fry
Fry egg in same pan as vegetables
Add quinoa to stir fry
Add diced scallions and cook for additional minute
Plate and enjoy
