Ingredients

    1 cup cream of coconut
    2 tbs corn syrup
    4 large egg whites
    2 tsp vanilla
    1/2 tsp salt
    3 cups unsweetened shredded coconut
    3 cups sweetened flaked coconut

Directions

Preheat oven to 375°F. Line 2 baking sheets with parchment and spray with pan spray or line with silicone mats.
Whisk together cream of coconut, corn syrup, egg whites, vanilla, and salt. Combine coconut flakes in large bowl and break up clumps. Pour liquid into coconut and mix well.
Drop heaping teaspoons of batter onto sheets spacing about 1" apart. Form into loose haystacks. Bake until golden brown about 15 mins. Cool and enjoy or dip in chocolate.
