Ingredients

    1 cup oat flour
    1/4 cup whole wheat flour
    1/2 cup white rice flour (brown rice would work as well)
    2 big very ripe bananas
    1 big egg(or if vegan an egg replacer)
    2 tbs honey(or maple syrup, agave nectar)
    3 tbs milk (instead of milk could be used 1/4 cup brewed coffee for a more aromatic flavor)
    1 tsp baking powder
    2 tsp apple cider vinegar

    Additional

    3/4 cups chocolate chips
    1/2 chopped nuts
    3/4 blueberries





Tips

If you lke your muffins sweeter, then add more sweetener of your choice.


Directions

Preheat oven to 180C (350F)
Mash the bananas
Add in the flour, egg, milk ,honey and stir.
At last mix with vinegar and baking powder.
After well conbined, divide the batter into 8 muffins.
Bake for 25-30 minutes. Until the stick comes clean and the top is slightly brown.
