Introduction

Ingredients

    1/2 cup heavy cream
    16 ounces white chocolate confectioner's coating
    Milk Chocolate for dipping

Tips

To make traditional truffles, substitute milk chocolate for white chocolate confectioners coating, increase quantity to 20 ounces and roll in cocoa powder.


Directions

Cut white chocolate into 1/4 inch pieces. Bring cream to simmer in a medium sauce pan. Add chocolate, cover and remove from heat. Let sit for five minutes to melt chocolate. Stir until completely melted and smooth. Add flavoring and coloring as desired. Let cool completely. May be placed in refrigerator to speed cooling. Form into 1/4 to 3/8 ounce balls. Melt milk chocolate to 100 degrees F. Dip formed centers in melted chocolate and place on parchment covered cookie sheet to cool and set.
